Easy Quick Pickle

My garden is about to explode with cucumbers! Tis the season and I'm so excited. If you know me, you know I don't like summer in the south, but garden fresh veg makes the heat and hummidity worth it! Quick pickles with cucumbers straight from the garden are one of my absolute summertime treats. If you've never had a quick pickle before first off let me say, I'm sorry because you're missing out. Second, they don't taste like regular pickles. They have a fresh subdued flavor and still have the crispness of cucumbers. Another thing to add is these are not fermented. Fermented pickles are made without vinegar and will have a cloudy brine. Fermented foods are wonderful for digestion and are great for people that don't want to eat vinegar. I have some fermented pickles in my fridge right now and I love them. But, like I said quick pickles have a different taste, so I like to have both on hand.
The best part is how easy they are to make. They take about 5 minutes to throw together and just have to sit in the fridge overnight and you're good to go! I like to eat them as a side to any summer food, on hamburger, or even just as a quick snack.

Ingredients
1 large English cucumber (or enough to fill whatever jar you're using)
1:1 boiling water to white vinegar- enough to cover the cucumbers.*
A handful of fresh dill
2 or 3 large garlic cloves in slices
1 tsp pink sea salt
1/2 tsp garlic powder
Black pepper to taste
*I don't put a measurement here because it will vary depending on how big your jar is. Just fill your jar to the top with cucumbers then fill it to the top with liquid in a 1:1 vin/water ratio.)
Disclaimer: I like mine pretty vinegary and salty. If you don't want a strong vinegar flavor, decrease the amount of vinegar and increase the water amount.

Directions
Slice cucumbers in thin rounds.
In a glass jar add cucumber slices, dill, garlic, and spices.
Fill about halfway with vinegar then with boiling water.
Tightly fit with a sealing lid (I use a Mason or Weck jar).
Keep in the fridge overnight before opening and enjoy!
