Peanut Butter Banana Bites

You guys. I've said this before but I honestly think this is the best recipe so far! Think healthy Reese's peanut butter egg with a banana inside. I honestly don't know if I'm the first to think of this but I must say it's genius.

I go through phases where I'm obsessed with peanut butter for like 2 months then I take a break from it. Well, apparently this is the month of peanut butter in the Izzy Cooks Kitchen! I think it's amazing how peanut butter can turn into a dough like consistency when you add other things to it like maple syrup or a little almond flour. Another peanut butter recipe I recently discovered that's like magic is The Toasted Pinenut's Peanut Butter Cookies. They have no flour, butter, or added oil and somehow turn into beautiful cookies.

I will dare say these decadent bites are healthy! First of all...banana. Good. Second, they're low in sugar because they're sweetened with only a little maple syrup. Good. Third, I cover them with dark chocolate. Good. Dark chocolate is better for you than regular chocolate but if you hate dark chocolate you can use whatever kind you want. My favorite chocolate brand, whether you're vegan or not, is Enjoy Life. It has no soy or nasty additives and it's yummy and melts well. I didn't use Enjoy Life for this batch, because I didn't have any, but it's the best chocolate I've tried!

Ingredients

(Makes 6-7 bites)

1/4 cup organic, smooth, no salt added peanut butter

2 tsp real maple syrup

2 TBSP almond flour

1/4 tsp vanilla

Dash of cinnamon

1 small banana sliced into about 1/2 inch pieces

1/4 cup melted dark chocolate (you might need a little more but you can always melt more if you run out)

1/2 scoop collagen (optional)

Peanut butter and bananas

Directions

  1. Add everything but the dark chocolate and banana to the bowl and mix it well with a rubber spatula. Mix until it turns into a doughy texture that you can pick up and mold like soft playdough. It should do this after about a minute of mixing but, if it doesn't, add a little more almond flour.

  2. Take about half a golf ball size piece of dough and roll it into a ball. Then flatten the ball with the palm of your hand and add a banana slice to the middle.

  3. Carefully mold the edges around the banana (add a little more dough if you need to) and gently roll it in your hand to make a ball around the banana.

  4. Place in the freezer about 10 minutes then roll around to cover in the melted chocolate.

  5. Return to the freezer until chocolate is hard. Store any leftovers in the freezer (if you have any).
