GF Brownie Bites

I always make sure to have snack bites on hand because one, I have a sweet tooth and want to have something healthy around to cure it and two, I'm a snacker. I need to have something around to grab in between meals. Having these keeps me from going for cookies or chips. I come up with a new flavor every once in a while because I like to keep it interesting! I think part of ensuring you can stick with a healthier lifestyle is being sure to have healthy snacks that aren't boring.
These brownie bites are anything but boring! They're just the right amount of sweet mixed with chocolate to make you feel like you're eating fudge but they're made with healthy ingredients like almond or coconut flour, chia seeds, no sugars, and organic cacao. I keep them in the fridge for about a week or freeze them and grab them whenever I need them. Sometimes I'll even pack them with my lunch as dessert.
All you need is a food processor/good blender and about 10 minutes and these babies will be ready to go!

Ingredients
8 Medjool dates
1/4 cup coconut or almond flour (add a little extra if using almond)
2 tsp chia seeds
1 TBS coconut oil
1/2 tsp vanilla

Directions
Combine everything in the food processor and blend until well combined.
With damp hands roll to desired size. They will feel wet and pretty soft so using wet hands helps them to roll easier. I love them soft because they're super fudgy but they will firm up as they chill!
Roll in coconut, cacao nibs, or spinkle with cacao powder.
