Balsamic Chicken Tenders

This is one of my favorites ways to cook chicken. I almost feel silly posting this because it's so easy! You just can't go wrong with fast and flavorful. I feel like chicken tenders get a bad wrap for some reason, but I love them because well...they're more tender than chicken breasts. I can't stand the texture of chicken breasts plus they take so much longer to cook! If I cook white meat it's usually chicken tenders. These chicken tenders can be eating in a million different ways. Cook up a batch at the beginning of the week to add to bowls and salads or make them into dinner with a side of steamed veg and mashed potatoes. My most recent favorite way to eat them is in the Caprese salad which is the ultimate meal prep meal! If you have 30 minutes and these simple ingredients you can make these tenders!

Balsamic chicken tenders

Ingredients

1 Lb free range organic chicken tenders

3 TBSP balsamic vinegar

4 TBSP olive oil

1/2 TBSP garlic powder

Sea salt

Pepper

Directions

(prep time= 15 mins Cook time= 10 mins.)

  1. Put chicken tenders in an even layer on a pan or plate with high edges. Pour balsamic and olive oil over the tenders and turn/move around to coat evenly. Season with half of the garlic powder, salt, and pepper remembering you can always add more salt after tasting the chicken, flip and season the other side with the rest of the garlic powder and a litle more salt/pepper.

  2. Let the chicken marinade for about 10-15 minutes.

  3. Heat a non-stick pan on high heat with a healthy drizzle of olive oil. When hot, add chicken in an even layer to the pan, pour the rest of the marinade over the chicken, and let cook for about 5 minutes.

  4. Flip, move the chicken around a little to coat in the sauce, and let cook 5 more minutes.

  5. Cut the biggest piece open to make sure it looks cooked through (it will continue to cook a little while resting).

  6. Serve hot or if you're adding to salad let it cool a little so it doesn't wilt the lettuce!
