The Best Fish Tacos

This is one of those meals we eat almost every other week. It's super flavorful, fast, and one of the best parts, super low mess. It literally takes 15 minutes to throw together. The fish I use is my delicious, super easy Chili Lime Tilapia. These flavorful fillets don't have to be eaten in tacos, but taco style is by far my favorite way to eat tilapia. By about January, I usually feel like I'll go crazy if I don't get fresh food. This meal saves me. It's a little taste of summer that can be eaten all year long!
I'm not going to ramble on and on about this meal, but I beg you to make it because it's honestly the best. I almost feel silly writing this recipe because it's so easy. Even the fish recipe I'm linking is the easiest thing you'll ever make. To me, some of the best meals have the most simple ingredients and this is one of those meals. I choose to make my own guacamole but you can use store bought to make this a truly mindless meal. If you do choose to use store-bought guac, make sure it's really good quality and is the chunky kind. You want hunks of avo, pieces of tomato and onions and tons of cilantro!
One more plus...I love how cost effective this is recipe is. Tilapia is super affordable so really the most expensive ingredient will be the avocado! Two fillets of tilapia are enough to make 8-10 tacos depending on how big your tortillas are!

Ingredients
8-10 tacos
Two tilapia fillets cooked using this Recipe
Guacamole (Click here for my recipe)
Sour cream
Corn tortillas
Extra cilantro
Lime

Directions
Follow this tilapia recipe (takes 10 minutes).
Break up the fish into big bite size pieces.
Warm tortillas for about 30 seconds on each side in a hot pan with a little olive oil.
Spread about a tsp of sour cream on the bottom of the tortilla, followed by a few pieces of fish, and top it off with guac.
Finish off with a little extra cilantro and a good squeeze of lime juice.
