Colorful Roasted Carrots

These colorful carrots are the perfect side for your holiday feast (or anytime)! Not only do they taste amazing, they also add a beautiful pop of color to any meal. You eat with your eyes first so anytime I can create a colorful plate I feel like it adds to my experience. Roasting carrots is a super easy process and honestly develop their own delicious flavor without adding a single thing. But, to dress these up for the holidays I added my favorite holiday herb, rosemary as well as a little maple syrup and garlic! The carrots caramelize on their own but adding a little sweetness really brings out the naturally sweet flavor of the carrots.

I will say, I made these very simple because, to me, simple sides go better with decadent holiday meals. If you so desire, you can really have some fun with these and add even more toppings. One of my favorite combos is adding chopped pecans in the last 5 minutes of roasting and goat cheese crumbles when they come out of the oven. Also, if you don't love rosemary, thyme is another fabulous herb to add...or, while you're at it, add both! Get crazy, food is art and it's your masterpiece. Listen to your taste buds and decide what tastes the best for you. Baking is really the only type of cooking that requires a scientific, exact approach. Colorful carrots with rosemary

Ingredients

Colorful carrots (petite or full size but if using larger carrots cut to smaller size)

5 cloves of garlic minced

Sprig of fresh rosemary (you can use dry if you need to)

2-3 tsp maple syrup

Pink sea salt

Garlic powder

Lemon pepper

Olive oil

Directions

(Preheat oven to 425)

  1. Toss carrots with olive oil, spices, and chopped rosemary.

  2. Lay in an even layer on a baking sheet with a Silpat or baking paper.

  3. Roast for about 25 minutes then drizzle a few tsp of maple syrup and return to the oven for about 10 or 15 more minutes until able to poke with a fork and browned slightly.

  4. Optional- in the last 5 or 10 minutes add some chopped pecans then when removed from the oven and add some goat cheese crumbles.

  5. Taste and finish with more salt if needed and serve warm!
