Decorating sugar cookies is a fun activity to do all year around but especially during the holidays! The problem is most of the store bought icings are packed with fake ingredients. This simple recipe makes pipable royal icing that hardens enough to be able to stack the cookies but is still soft and melts in your mouth. Anyother bonus, it's vegan! I'm not going to lie to you, decorating cookis isn't a quick acivity. It takes some time, but it's always fun to turn on Christmas music, sip on some hot chocolate and decorate!
If you've never used royal icing before, here's a little turotial.
Put your icing in a pipping bag or ziplock with the tip cut off.
Pipe a thin line around the edge of the cookie and the pipe lines inside the edge.
Then with a toothpick gently spread the icing until it covers the cookie.
I usually do half the cookie then the other half because the icing will start to dry pretty quickly and it's easier to work with when it's soft. If you need a visual search for videos on youtube or pinterest!

Ingredients
(enough to ice 6 cookies)
Regular
1 cup powdered sugar
3 tsp pecan milk
Dash of vanilla
Orange
3-4 tsp fresh orange juice
1 tsp pecan milk
1 TBSP orange zest
Peppermint
3 tsp pecan milk (I honestly haven't tried this with other milks, but I see no reason why it wouldn't work.)
2 TBSP ground soft peppermint sticks
Tip- I grind them in my coffee grinder. If you don't want to mess with grinding pepermint sticks use a little dash of peppermint extract. Add a little at a time, tasting to get it where you want it.)
Dash of vanilla

Directions
Mix powdered sugar with 1 tsp of liquid at a time. (You want the icing to be pipable but thick enough to be able to hold it's shape for a few seconds when drizzled- see above)
Add any flavorings and mix well
Add any colorings you desire and pipe away!
