Grain Free Sugar Cookies (3 Flavors!)

Nothing screams Christmas like decorated sugar cookies! These cookies are grain free and so so easy to make...I finaly cracked the code! They're quick to chill and don't spread when cooking. They hold up great but are still soft-ish on the inside. I'm just so excited because I love decorating Christmas cookies and I've been feel deprived since I went GF. I hope you enjoy these as much as I do!

For decorating, you can use whatever icing you prefer, but I would suggest my royal icing recipe. It's so easy to make and you can really get creative with the colors. I was looking through Pinterest for royal icing recipes and they all looked overly complicated. I wanted an easy recipe that looks nice and hardens so you can stack the cookies. To my surprise, my simple recipe worked exactly how I wanted it to! Love it when that happens. See the recipe here!

Ingredients
(Makes 18 cookies)
Base
2 cups of almond flour
1/4 cup tapioca flour
3 TBSP of sugar (I use organic cane sugar that's fairly fine)
2 TBSP maple syrup
3 TBSP butter (melted)
1/4 tsp salt
1/2 tsp vanilla
Almond
1/4 tsp almond extract (1/4 tsp if you don't split dough)
Almond orange
1/8 tsp almond extract
1/2 of an orange zested
Peppermint
3 TBSP finely crushed peppermint stirrers
(Use the soft peppermint sticks. I grind mine in my coffee grinder. You can also use 1/8 tsp peppermint extract instead of the peppermint sticks.)
Directions
Preheat oven to 325-350F (my oven runs really hot so I have to do 325)
With a mixr, cream butter, and sugar.
Add desired extracts and maple syurp.
Mix dry ingredients in a separate bowl and slowly combine with the wet.
Mix until combined.
The mixture should combine easily when pressed together.
Form into a ball and place between two sheets of parchment paper- roll to about 1/4 inch thick.
Stick the rolled dough in th fridge for 30 minutes.
Cut out the cookies and bake for about 7-10 minutes watching very closley
Let cool completely before decorating!
