Golden Milk

I recently got into this whole golden milk thing and let me tell you, I didn't like it at first. I think the problem is that I really don't like store-bought nut milk and that's what I was using. Now that I've been making my own nut milk I've discovered how many uses it really can have. I made french toast this morning using pecan milk instead of dairy, I put it in my coffee, and I've been making golden milk like crazy!

To make pecan milk-

  • Soak a 2 cups of pecans covered in water for a few hours (if using almonds soak overnight).

  • Drain soaking water.

  • I usually add a little more than 1 cup of water to each cup of nuts because I like it a little thicker. Most recipes call for 2 cups of water to 1 cup of nuts. Play around with it and see what you prefer.

  • Pecans have so much flavor on their own so I add nothing before blending, but when I use almonds or cashews I add a pinch of sea salt and a couple dates or a TBSP of maple syrup.

  • Blend the fire out of the nuts and water.

  • Strain through a cheesecloth/nut milk bag/or clean kitchen towel.

  • Store in the fridge for 3-4 days (make in smaller batches so it won't go bad).

  • Save nut milk pulp to make granola- recipe here!

Golden milk sounds like it wouldn't be good, but I'm telling you, it really warms you down to the core, it's good for you, and I love the taste. Another key to making it so tasty is using fresh turmeric. It has a totally different flavor than dry turmeric.

Golden milk

Ginger and turmeric are both excellent for your whole body. I can attest to the relief from cold/cough because I woke up this morning with a little runny nose and itchy throat. One mug and I'm feeling better. Also, a mug of this before bed really relaxes me. All this being said, I don't know how much you would have to ingest to, for example, help back pain. To actually get some of the more internal benefits from turmeric and ginger you really have to take a supplement, but it still has to help and little and is certainly not going to hurt anything!

Ingredients

(Makes one serving)

1 cup milk (I use nondairy- remember dairy in inflammitory, even if you're not lactose intolerant.)

Fresh turmeric

Fresh ginger

I use about a thumbnail size chunk of each

2 TBSP sweetener (I use 1 TBSP of local honey and 1 TBSP of real maple syrup)

Dash of vanilla

Cinnamon to taste

A couple grinds of organic black pepper

Directions

  1. Microplane or very finely mince turmeric and ginger in a small pot.

  2. Add all other ingredients.

  3. Bring to a very low simmer stirring almost constantly for about 5 minutes.

  4. Serve topped with a little extra cinnamon.

Tip- You can pour through a fine strainer to remove the turmeric and ginger to get a totally smooth drink. I don't do this though. The pieces don't bother me and I don't want to discard the beneficial pulp.
