Fall Feels Overnight Oats

Overnight oats are an absolute lifesaver in the morning! Breakfast is truly the most important meal of the day. You're literally breaking your fast from the night before. Your body and brain need the fuel to perform until lunch. If you're not a morning person (like me) this can be a problem. I don't know about you, but the last thing I want to do at 530am is eat. My ritual is to drink a mug of warm lemon water first thing to wake up my belly. This usually gets me hungry enough for at least a few bites before I leave and I take the rest to work since I'm always starving by 9am. These are a little more involved then most of the others I've made in the past, but it's well worth it.

It's like fall in a jar!

Ingredients

1/2-1 cup GF uncooked oats

Cashew/pecan milk (or your milk preference)

1 banana

1 honey crisp apple (or Apple Cider Jam from Trader Joe's)

Real maple syrup

Super seed blend from Trader Joe's (optional)

Pecans

Cinnamon to taste

Kiefer (optional)

2 TBSP Coconut oil

vanilla

Directions

1) Put thinly sliced apples in a pot with 1/2-1 TBSP coconut oil, cinnamon, vanilla and 1 tsp maple syrup. Cover and let simmer until soft. (skip this step if you're using jam)

2) Season bananas with cinnamon and about 1 TBSP maple syrup. Heat 1/2-1 TBSP coconut oil on medium high heat and add banana slices. Flip after about a minute (or when they start to caramelize) and let cook for another minute or two. Cook until bananas are soft and browned but not burnt.

Now that everything is cooked start assembling your jar.

1) Start by adding oats, nut milk and kiefer to the top of the oats.

2) Add cinnamon, vanilla, and maple syrup to taste and give it a stir.

3) Sprinkle with super seed blend, then add a layer or bananas and apples (save extra apples for a snack!).

4) Top with a little more super seed blend and some pecans.

5) Store in the fridge overnight and enjoy!
