Pumpkin Spice Recipe Crispy Treats (Healthier)

My quest continues to come up with healthier holiday goodies! Even though it's still 90 degrees here in Nashville, I'm going to act like it's fall weather outside, so I don't go insane. I've decorated my table with a few pumpkins and a mum and I've been making yummy, healthier, sweets like crazy! Part of me wants to get a pumpkin to carve, but I know it would be rotten and droopy within hours. Sweet treats will have keep me occupied until cooler weather shows up. It is going to happen right? It's going to get cooler. Right?

These rice crispy treats are healthier thanks to the substitution of butter with coconut oil, cows milk with cashew milk and using good quality gluten free/vegan marshmallows. I also threw in a little fall twist by adding pumpkin spice. This is totally optional, but I think it adds to the tastiness! I like my rice crispy treats a little more on the crisp side, so my puffed rice/marshmallow ratio might be a little different then some people are used to. If you like more of a sticky treat leave out 1/2- 1 cup of the puffed rice.

Ingredients- Makes about 9 large treats
1 10 oz bag of regular size marshmallows or about 6 cups mini marshmallows
3 TBSP coconut oil
1 TBSP cashew (or other non dairy) milk
1 tsp vanilla
1/2 tsp pumpkin spice (this adds a subtle flavor- if you want more pumpkin spice flavor add more spice!)
6 cups puffed rice cereal

Directions
In a large pot slowly melt coconut oil on low heat.
Once melted add vanilla (it might spit/bubble some)
Add about half the marshmallows and stir until they start to melt.
Add the rest of the marshmallows stirring to combine as they melt.
When the marshmallows are almost completely melted add cashew milk and pumpkin spice.
Stir until everything is well combined.
Add a couple cups of puffed rice at a time and stir to combine.
Once well combined add to a square pan and using a non stick spatula press into an even layer.
...or if you lost your square pan like I did, put into a rectangular pan leaving part of it empty. You will be able to mold it into a square making the end into a straight even line with your spatula. Gotta make due people!
Enjoy once cooled.
Store in an air tight container.
