Yippy! Are ya'll excited about almost being done!? I know I am. I'm planning on finishing strong and then slowly adding sugar back in and trying not to add too much processed foods back in at all. I'll start out by adding fruit and healthy whole grains (and a glass of wine here and there) and see how I feel.
Todays lunch is for sure my favorite meal of the day! It's such a fresh meal and perfect for the last days of summer. The dressing is a little more like a dip but it's so tasty and is perfect for the shrimp. If you want it a little thinner just add some olive oil and/or lime juice.
If you've miss the last few days of the meal plans or my post on low stomach acid check it out. Day 1 of the meal plan has a grocery list! I feel like most peoples digestion would benefit from this elimination diet and even someone without digestion issues would benefit from cutting out sugar and processed foods for a week!
Meals for day 6
Breakfast
Lemon, honey, a splash of apple cider vinegar in half a mug of warm water 30 mins before eating.
Muesli with Kiefer and Plantain Chips

I really like this breakfast! It's so easy to throw together and has so many digestive benifits
Add muesli, kiefer, cinnamon, honey (or maple syrup if you don't mind the sugar...I like it with maple syrup the best), super seeds, extra nuts to a bowl and top with plantain chips.
Another tasty option for during a non sugar detox time would be honey caramelized bananas instead of plantains!
Matcha of corse!

Lunch
Arugula salad with Shrimp and Avocado Sauce

I usually would never suggest using frozen, precooked anything, but for this kind of meal I use frozen precooked shrimp.
Chop up- Green onion, celery, steamed green beans, and cucumber and add it to a fair amount of arugula (If you hate arugula use another leafy green lettuce.
Make avocado sauce- Add 1 ripe medium avocado, a good handful of cilantro, half juice of a lime, a drizzle of olive oil, salt, garlic powder, lemon pepper to food processor and pulse. If you don't have a processor smash really well with fork. If you want it more thin add more oil and lime juice. Taste before you serve and adjust seasoning if needed.
Top with thawed shrimp, plantain chips and Everything but the Bagel Seasoning and avocado sauce.
BOOM! Lunch!
Dinner
Whatever leftovers you have in a bowl and enjoy. Ha!

I had leftover chicken, roasted carrot, sweet potatoes and green beans and kale kohlrabi mix tossed in lemon juice, salt, pepper, olive oil, topped with goat cheese crumbles!
Snacks
Plantain chips and roasted veggies.SaveSaveSaveSaveSaveSave
