Cilantro Lime Chicken Lettuce Wraps

This is day three of my week long detox and I'm feeling great! Yesterday, I was feeling really tried and cranky. I wanted something sweet and a glass of wine really badly. But, today I woke up with a ton of energy and a positive attitude. I just ate these lettuce wraps for lunch and I still want something sweet but the craving isn't intense enough to really bother me. Just a little nagging voice in the back of my head.

These wraps use the roasted chicken that I made earlier in the week (you can get the recipe here). I made it in lettuce wraps, but if you aren't going grain free this mix would be so yummy on a tortilla! I made these really easily by layering the ingredients, but you could also mixed everything in a bowl to make more of a chicken salad. Or, another option is to chop everything up, including the lettuce, and eat it as a chopped salad. It's really more about the ingredients, not how you eat them. Regardless it's such a refreshing quick meal you'll want to eat it even if you aren't doing a detox!

One thing I want to say in relation to the detox and balancing my stomach acid...I have mentioned I'm taking HCL with pepsin. I wan't to clarify that I don't take it with every meal. I take it only when I eat a meal with more than 20g of protein and I'm having trouble digesting. Usually, I only end up needing it when I eat a bigger meal at dinner. When I'm almost done with my meal I can usually tell if I'm going to need it. I'll have indigestion and increased bloating/burping and I know I'm not digesting well enough with my own stomach acid. I never take it at the beginning of the meal. I want to give my own body the chance to work on its own before I give it any help. Ingredients- Adjust amounts depending on how much you're making

Cold leftover chicken

Slaw mix- I've been using kolarabi salad blend from Trader Joe's but I also like broccoli slaw.

Avocado

Purple onion

Lime

Cilantro

Sea salt

Large leaf lettuce or tortilla wraps

Directions

Either throw everything in a bowl and mix it or arrange the ingredients in a tortilla/lettuce.

I layered everything then squeezed lime juice over it and added a little salt at the end.

That's it! So quick and easy. The perfect summer lunch!
