Shrimp Spring Rolls with Peanut Sauce

I've found my new favorite quick lunch for the rest of the summer! My favorite thing is to come up with simple yet flavorful meals that everyone can make and enjoy! This lunch or side is refreshing and healthy. It's gluten free, low carb, and packed with veggies and shrimp. I use precooked frozen shrimp and precut broccoli slaw mix to make it super easy with as little prep as possible. The only effort that goes into making this is mixing the sauce! I use coconut aminos instead of soy sauce or tamari because I like it better. Even low sodium tamari makes me have what I call "salt mouth." From my experience you can use it as a substitute for soy sauce in any occasion! I make the peanut sauce thick, which is abnormal when it comes to a dipping sauce, but I really love the consistency! Also, I make these for myself since my husband hates peanuts. This amount of sauce is enough for three rolls. Make more of everything if you need to!

Ingredients
Rice paper wraps (I use brown rice but white rice works too)
Thawed/cooked large shrimp
Slaw mix- broccoli or cabbage
Cucumber
Avocado
Cilantro (Optional)
Sauce
3 TBSP organic peanut butter- crunchy or smooth
2 TBSP coconut aminos
2 TBSP rice wine vinegar
Drizzle of agave
1 tsp finely chopped garlic
1-1/2 tsp finely chopped ginger (or more is you love ginger like I do!)
Dash of yuzu sauce for spice (optional)

Directions
To make sauce, combine everything in a bowl and stir. If you want it a little thinner add more liquid and stir until you have it the consistency you like!
Follow instruction on your rice paper.
For mine, I dip a single sheet of paper into a shallow dish of warm water a couple times then lay the paper on a paper towel.
Place two or three shrimp in the middle of the paper followed by the rest of the veggies on top.
Keep the filling in the middle of the paper in a line leaving a little room on the left and right sides.
Rolling can be tricky but once you get the hang of it it's easy. Follow instructions on the back of the package or watch a youtube video.
That's it! Just a little mixing and rolling...No cooking required!
