Chocolate Chip GF Banana Bread

I'm a sucker for banana bread. The smell and the taste feel like a big hug for my soul! Usually, I make it non-stop in the fall and winter, but I had a major craving today, in the middle of summer, and I'm ok with it because my house smells amazing. This beautiful loaf has coconut oil instead of butter, coconut sugar instead of white sugar and greek yogurt for a little extra umf. "Umf" ...if that how you spell that sound? Cinnamon is anti-inflammatory, high in antioxidants and aids in brain function so I loaded this bread up with cinnamon goodness. If you want to remove the little bit of unhealthiness that comes from the chocolate chips you can use cocoa nibs or walnuts instead! But, we're all about that balance over here and banana and chocolate are just one of those killer combos! There's really nothing better than banana bread with a cup of coffee in the morning or with tea for an afternoon snack! Do yourself a favor and pop this in the oven now and in a couple hrs, you'll have something delicious for everyone to enjoy!

Ingredients
2 overripe bananas
Tip- put bananas in the freezer when they start to go bad and use them for breads and smoothies!
1/3 cup soft organic coconut oil
1/4 cups greek yogurt
1 egg
1/2 tsp vanilla
1 cup GF flour (I used Trader Joe's brand)
1/4 cup oat flour
1/2 tsp xanthan gum
1/2-1 TBSP cinnamon
1/2 tsp baking powder
1/2 tsp bakin soda
1/2 cup coconut sugar
1/4 cup brown sugar
Pinch of salt
1/2 cup chocolate chips
1 ripe banana

Directions
Preheat to 350F
Combine 2 overripe bananas, coconut oil, greek yogurt, egg, and vanilla.
Pulse in food processor until smooth. (You can also use a mixer if you don't have a processor, but be sure to smash bananas first.)
Add flours, xanthan gum, cinnamon and pulse until combined.
Add baking powder/soda, sugars and salt and pulse again to combine.
Last add chocolate chips and pulse once or twice or stir to combine.
Pour to pan prepared with coconut oil.
Place 1 banana cut in half and sprinkle some chocolate chips on top of loaf.
Bake for 50-60 minutes- until toothpick comes out clean.
Let cool almost completely and enjoy!
