Bone Broth

There are so many health trends out there that it's hard to keep up with which ones are legit and which ones are total BS. One key is to do your research and if something seems interesting to you, try it out. If you feel better, keep doing it, if not... move on. Bone broth is that it's been around for forever. When you hear your grandparents talking about chicken soup being a cure-all, they aren't talking about Campbell's chicken noodle. They are talking about homemade bone broth. So, what's the big deal? Why is bone broth so good for you?
1. Gut healing- The gelatin in bone broth heals your gut lining. People with leaky gut see improvements in digestion and bowel function when drinking broth on a regular basis. I can personally speak to this working. My nerves go to my gut. Some people get a headache or break out in hives...I get an upset stomach. Weeks before my wedding my stomach was a mess. I won't go into the details but my toilet and I were besties (TMI?). I didn't feel nervous, but I figured it must be subconscious nerves. Anyway, I drank bone broth for a week or so and adjusted a few other things in my life and a couple days before the wedding my stomach was back to normal! Again, pay attention to your body. Everyone is different. What works for me might not work for you.
2. Beauty benefits- Ever hear of collagen? That stuff that makes our skin nice and plump and when we're young but quickly disappears as we age. Guess what?! Bone broth is packed with collagen!
3. Bone and joint health- Glucosamine and chondroitin sulfate are both found in bone broth and are crazy beneficial for you joints and bones!
4. Immune support- The high concentration of minerals in bone broth aid in immune support. This is that "cure all" part our grandparents talk about!
I'm a strong believer that there are no cure-alls. You can't drink bone broth and lead a sedentary life and eat unhealthy foods and expect to be super human. But, if you practice balance and try out different health trends to find the combo that works for you, your life will be enhanced and you'll see a big difference in your overall health and wellness!

Ingredients
Bones/skin from 1 whole roasted chicken
Tip- Buying a whole chicken and roasting it at the beginning of the week will give you loads of leftovers and allow you to save money by making your own stock.
Filtered water
2 celery stalks
2 carrots
5 cloves of garlic
1/2 onion
1/2 lemon (I use the lemon that I stuffed my roasted chicken with)
Dash of apple cider vinegar
1 knob fresh turmeric (or TBSP fresh)
Sea salt (I only put a tsp or two keeping in mind I will be season whatever soup I will be making.)
For extra vitamins and minerals add some kale/spinach
Directions
Put all ingredients in a crock pot or large pot.
Fill water to cover bones.
Simmer on low for at least 12 hrs. or up to 24 hrs.
When cooled, strain broth into a large bowl. Removing extra chicken from the bones and remove carrots to use in soup.
Store in fridge for up to 4 days.
Freeze the remainder in ice cube trays or freezer bags and warm up when needed.
