Grain Free- Banana Super Seed Muffins

Sometimes I still feel high maintenance and embarrassed by my choice to be gluten free, but it's well worth it to me! My mom was GF before it was cool. My stomach used to hurt ALL the time and she would beg me to try to go without wheat for two weeks to see how I felt. When I finally gave in, I honestly didn't feel that much different. So, after two weeks I went to my favorite lunch spot and ordered hummus with pita bread. About 20 minutes after I was done eating my stomach felt like it was in a vice and I was overwhelmed with exhaustion. Mom did her best to not say, "I told you so." Now that I have been without gluten for years my stomach hardly ever hurts and I have so much more energy than I used to. It's not easy to get started when you cut something out of your diet. You crave what you used to eat so badly you think you want it. Then you eat it and you feel awful and eventually, realize it's not worth it. GF baking is not easy. It's frustrating and I pretty much gave up on the whole process until recently. As of late, I've been experimenting with different techniques. Some work and some don't. I still haven't figured out sandwich bread, but I make great pie/tart crust, amazing banana bread, and these babies. These muffins are one of my favorite things to have on hand for a quick breakfast. You can add whatever you want to them as to not get bored with one flavor. Here I made, blueberry, chocolate chip, and strawberry!

Ingredients (Makes 6 muffins- double if you'd like.)
1 banana
1 cup sunflower seed butter
1 egg
1- 2 TBSP honey (These muffins aren't super sweet, which I like- I usually use 1 TBSP only.)
1/4 tsp baking soda
1/4 tbs apple cider vinegar
1 tsp cinnamon
A pinch of salt
A dash of vanilla
1 TBS super seed blend from Trader Joe's (Optional)
Whatever added goodies you would like- I used dehydrated strawberries so the water wouldn't leech out.
Tip- Don't put a dehydrated strawberry on top of the muffin while baking because they will burn if exposed to the heat directly.
Directions
Preheat to 400F
Add everything except the goodies to the blender and blend until smooth.
Stir in additives and divide evenly into muffin cups.
Bake for 15-20 mins Tip- Check one after 15-20 mins. They might need a few more minutes depending on your oven and other mysterious factors. (I check mine by eating half of one or you can check with a toothpick.)
