Breakfast Tacos

Tacos for breakfast! Yippy! These are super easy if you have all the right ingredients on hand. I make my own guacamole, which I suggest doing, but you can use pre-made if you want. Other than that, the only thing you have to make is the eggs! I use some specific ingredients, that I love, but you can adjust for what you have available. This is a perfect weekend breakfast/ brunch because it's easy to whip up a large batch for the whole family or a group of friends!

Ingredients (Amounts in this recipe served two people- about 5 or 6 tacos. Adjust as needed)
For guacamole
1 avocado
1/4 small onion, minced
1 small garlic clove, minced
1/2 lime
Handful of cherry tomatoes chopped small
Cilantro to taste
Salt to taste
Pepper to taste
Garlic powder to taste
For tacos
Scrambled eggs
Garlic powder
Salt
Pepper
Trader Joe's chili lime seasoning (Optional- use chili seasoning instead)
Sour cream or greek yogurt
Salsa
Lime wedges
Small handful of purple cabbage, cut into small strips
Extra cilantro (Optional)
Trader Joe's goat cheese crumbles or your favorite cheese
Corn tortillas

Directions
Make guacamole by combining all prepared ingredients in a bowl.
Smash with a fork until avocado is as smooth as you like.
Make scrambled eggs and season with garlic powder, salt, pepper, and chili seasoning.
In warm pan, with a drizzle of olive oil, warm tortillas about 30 seconds on each side, until soft.
Taste eggs and guacamole to make sure they are as seasoned as you like and adjust if needed.
Place eggs, guacamole, a small amount of sour cream, salsa, cabbage, and cheese in tortilla and top with lime juice and extra cilantro if desired.
