Jalapeño Skillet Hash

Who doesn't love a good skillet meal? They are quick, easy and delicious. I love savory breakfasts and brunches. A hearty start to the day will do wonders for your productivity! The key is to make it hearty without being too heavy. You don't want to be bogged down first thing in the morning. While this does have white potatoes which are a little less than healthy, it's also packed with tons of veggies, jalapeño chicken sausage, and eggs for a boost of protein! Easily make this vegan by using mushrooms instead of chicken sausage! Serve with a side of fruit and some coffee (Or mimosas!) for a super balanced meal!

Ingredients
Yellow baby dutch potatoes (enough to cover bottom of skillet in one layer)
1 small purple onion
2-3 jalapeño chicken sausages (I use Trader Joe's brand)
1-2 big handfuls of your favorite tomatoes
1-2 Jalapeños
2 huge handfuls of spinach
3 large cloves of garlic, minced
5 eggs
Freshly grated cheddar cheese
1/2 tsp paprika
Cayenne pepper
Black pepper
Pink sea salt
Olive oil
Directions
Prepare your ingredients.
Tips- I'm weird and like to cut the potatoes into different sizes so some will be slightly crispy and other will be soft. I leave the purple onion in pretty big chunks. Deseed the jalapeños unless you want your mouth on fire. I usually leave a little bit of the seeds to give a kick of spice. I half my tomatoes but you can cut them however you like!
Preheat oven to 400F.
Add potatoes, garlic, olive oil and all the spices to the pan. Stir to combine and cook 10-15 mins.
Remove from oven and add onions, cut up sausage, and diced jalapeño. Cook 5-10 mins.
Add tomatoes and cook another 5 minutes.
At this point be sure to taste your food. Add more spices if needed.
Stir in spinach and add eggs on top (Be careful to not break yolks). Season eggs.
Place back in the oven for about 5-8 minutes, until eggs have set. I like over easy so I do closer to 5 minutes.
Serve immediately topped with freshly grated cheddar cheese, and some finishing salt and pepper!
