Mediterranean Zucchini Boats

There's nothing better on a warm spring day than a mediterranean meal! These zucchini boats are full of fresh flavors and are a great way to get tons of veggies without hating it. They could easily be made vegetarian by using some hearty mushrooms instead of turkey meat! Once you have all the ingredients prepared it will only take about 30 minutes to cook! Serve slathered in homemade tzatziki and you've got yourself a delicious, balanced meal! Ingredients
5 large zucchinis
1Lb ground turkey
1/2 finely chopped onion
1 finely chopped red pepper
1/2 cup katakana olives cut into fourths
3-4 large cloves of garlic minced
1/2 cup of parsley chopped
Salt to taste
Lemon pepper to taste
Garlic powder to taste
1/4 tsp cayenne
Olive oil
Feta (I use Trader Joe's feta with mediterranean spices!)
Directions
Preheat oven to 400F.
Prepare zucchini buy cutting it in half and scoop out seeds to make deep well in middle of zucchini halves.
Chop onion, garlic, and red pepper.
Heat pan with olive oil on medium high.
Cook onion, garlic and pepper until soft without burning.
Push ingredients to edges of the pan and place turkey in middle to cook.
Stir frequently and break up the turkey as it cooks so there are no large chunks.
Season and taste as you go until it tastes how you want.
Add parsley and olives and stir to combine.
Add filling to zucchini boats.
Bake for 20 minutes at 400F.
Place oven on broil for 2-3 minutes.
Turn off oven and remove.
Sprinkle zucchini with some feta and place back in the oven for a few minutes.
Serve topped with extra parsley, a little more cheese and Tzatzki (See recipe below)!
Directions for Tzatziki
Shave 1 medium english cucumber with a large bore cheese grater.
Place in a towel and squeeze out most of the water.
Add 3 TBSP greek yogurt and 1 TBSP sour cream and stir to combine.
Mince 1 clove of garlic and chop 1-1 1/2 TBSP of dill and add to bowl.
Mix with 1/2 of a juiced lemon, a pinch of salt, lemon pepper, and garlic powder.
TASTE before you serve and adjust as needed!
