Gluten Free Chocolate Tart

Can I hear you say YUM! This tart is super decadent and rich. The magic is that it's not the most unhealthy dessert on the planet. It's gluten free, grain free, very easily vegan, but you would never know it because it's so darn good. Even sweet treats can be balanced!

Ingredients

For crust

3/4 cups almond flour

3 TBSP coconut flour

3 TBSP almond meal

1/4 tsp ginger powder

1/8 tsp sea salt

1 egg

1/4 cups melted butter (use coconut oil or vegan butter to make it vegan!)

For Filling

1 can full fat coconut milk

8-10 oz semi sweet 60% chocolate (use vegan chocolate to make it vegan!)

1 tsp vanilla

1/4 tsp sea salt

Directions

For crust

Preheat oven to 350F.

Put all ingredients in food processor and pulse until combined.

Mix on low until a ball forms.

Prepare pan with moderate amount of coconut oil- be sure to get in all crevices.

Place dough ball in-between two pieces of parchment paper and roll into an even layer.

Carefully take top layer of parchment off and lay dough over pan.

Remove other piece of parchment paper.

Gently make sure crust is even and pushed into crevices.

Poke a few hole in bottom of crust.

Bake for approx. 15 mins until crust is firmed up.

For filling

Bring coconut milk to simmer.

Add chocolate and remove from heat.

Stir in chocolate until melted.

Let cool about 10 mins.

Whisk in eggs, vanilla and salt.

Add to cooled chocolate.

Poor filling into crust.

Bake for 15 mins at 350F.

Let cool for about 20 minutes on counter.

Place in fridge for a minimum of 30 minutes. 1-2 hrs is ideal!

You should be able to lay a wire rack or plate on top and turn tart upside down in order to remove from pan.

Add cut strawberries, dust with powdered sugar and shaved chocolate right before serving.

Tip- Filling will be giggly at first, but will form as it cools. It will be hard to not cut right into it right away because it smells amazing, but it's better if it's allowed to cool all the way. Top with extra strawberries, whip cream and/or ice cream and enjoy!
