Super Seeds Energy Bites!

I love those delicious health food bars you can buy that give you a boost of energy and are a filling snack for in between meals. The problem is they are so darn expensive! I looked at the ingredients and realized they are basically made with nuts, grains, and dates. Easy enough! There are many different versions of these that can be made, but these particular bites are made with ancient grains, super seeds, and have a nice coconut flavor from the coconut oil. They're perfect for a balanced lifestyle because they're sweet enough to take care of a sweet tooth attack, but are

full of healthy ingredients!

Energy bites!

Ingredients

1 cup almond meal

1/3 cups Ancient Grains Blend from Trader Joe's (or steel cut oats)

2 TBSP Super Seed Ancient Grain Blend- also TJ's (or you can use chia seeds/flax seeds- any blend you want!)

Handful of walnuts

2 tsp coconut oil (if you hate coconut use, nut butter instead)

12-15 pitted dates

1-2 TBSP honey

Directions

Add almond meal, ancient grains, super seeds, and walnuts to food processor.

Pulse until everything is combined and walnuts are pulverized.

Add coconut oil and dates- turn food processor on low and let mix well (about 3-5 mins).

As the ingredients are mixing, slowly add honey to the mix.

Once the dough begins to hold together, and you see no dry spots, you're ready to roll.

Using a spoon, scoop dough out and gently roll into balls.

I make the balls big enough to get two bites out of each one which makes about 15 energy balls.

Keep in an airtight container in the fridge for about a week or throw them in the freezer. These are great to take on the plane for a mid-trip snack and should keep fine without a cold pack for a day or so, they just might get a little sticky.
