Fool proof foil salmon- Full meal

Salmon is beyond good for you! Packed with omega 3s and healthy fats, it gives your body a boost and is a perfect fare to serve for a nice meal. The beauty of this meal is how easy it is and how the clean-up is even easier!

25 minutes is all you'll need!

Tip

Use fresh salmon. Salmon seems to have a different texture and doesn't taste nearly as good once frozen.

Ingredients

2 pieces of salmon with skin on (adjust amount for your family plus more if you want leftovers)

2 lemons

Minced raw garlic

Fresh dill

Pink sea salt

Lemon pepper

Garlic powder

Olive oil

Asparagus or your favorite veggie

Directions

Preheat oven to 400F.

Cut lemon into slices and lay the end pieces on bottom.

Place salmon skin side down on top of lemon slices.

Season with salt, lemon pepper, and garlic powder.

Add minced garlic and chopped dill to top of fish.

Place two more lemon slices on top of fish.

Add whole dill to very top.

Fold foil to make sealed packet.

Cook for 20-25 mins.

Take off whole dill and serve with rice and asparagus.

Add asparagus and an inch or two of water to a pot and cover. Bring to a boil for about 30 seconds and remove from heat. Let stand covered for 5 minutes and check. I like mine barely cooked but cook to how you like it. I will say, there's nothing worse than overcooked asparagus. The trick is to pay attention to the color. Once you start getting past the bright green color and they start turning darker and dull they're overcooked.

*Fish is very easy to overcook. I usually cook 20 minutes, take the foil off hot pan and open the foil to let steam out while plating the rest of the meal. The fish will cook a little more as it rests.

Serve with white/brown rice or favorite grain and a side salad.
