Elderberry Elixer

As a nurse I am constantly exposed to sickness, so a few years ago, after I got the flu the year before, I started taking elderberry capsules. I was amazed at the difference they made. The problem, those suckers are expensive! I decided to go without them for a year and got the respiratory funk for about 3 weeks. Enter my genius mother who decided to make her own elderberry syrup! It tastes great, is easy to make, and is way cheaper than buying the capsules.

Ingredients
2/3 cups dried elderberries (I ordered from Amazon)
2 tbsp fresh ginger
1 cinnamon stick
1/2 tsp cloves
1 cup honey
3 1/2 cups filtered water
Directions
Add everything except honey to pot
Bring to a boil
Reduce heat, cover and simmer for 45 mins
Mash everything together with a large spoon or potato masher
Let cool enough to handle and poor into cheese cloth or nut milk bag
Add honey (If you want thicker syrup cook down a little more)
Refrigerate

Take 1 TBSP 1-2 times every other day and increase to every day if feeling sick!
