Sunny Side Red Pepper Eggs

I'm a huge believer in the concept that you eat with your eyes. Always try to make your meals visually appealing. One of the main ways to to do this is to add plenty of color! A colorful breakfast is not only healthy, but on a subconscious level it will give you a boost of positive vibes! Breakfast should be filling and healthy because it's how you start your day. If you fill yourself up with sugars and carbs first thing in the morning you're guaranteed to be hungry before lunch. This opens you up to unhealthy snacking. On a side note, even with eating a balanced breakfast, you still might get hungry before you get to eat again. Be prepared and bring yourself healthy, filling snacks to have throughout the day for in-between meals! Eating frequent, smaller and healthier meals is much better for you than eating a couple of huge meals. On a normal day, I usually eat something small every two hrs and I drink plenty of WATER!
You should be drinking about liters of water a day!
Ingredients
Your favorite color pepper
Eggs
Salt
Pepper
Garlic powder
Olive oil
Directions
Cut pepper into 1-2 inch slices.
Heat pan with olive oil.
When pan is hot add peppers and let them cook for about 1 minute.
Carefully crack egg inside pepper (Some egg might run out, but that's ok).
Carefully break membrane around yolk. You'll see a clear "jelly" around yolk. If that's broken the egg will cook more evenly.
Turn heat to low.
Cover with lid or tin foil and cook for approx. 5 mins.
Tip- Check often after about 3 minutes. The trick is to take these off the heat when you see a white film forming on the yolk. The steam caused by covering the pan and the low heat cook the egg without over cooking the bottom. Less white over the yolk=runnier yolk. More white= Harder yolk.
Serve with your favorite fruit and chicken sausage. My personal favorite is Trader Joe's chicken sausages. They have a ton of flavors to choose from and I love them all!
