These are my GF Lemon Cranberry Scones but with orange flavor! Scones are filled with butter so I wouldn't call them the healthiest thing on the planet but they are a great balanced breakfast when served with fruit and nuts and a yummy healthier homemade dessert option!
Ingredients
3 cup GF flour (I use Trader Joes brand)
1 tbsp. baking powder
Zest of one orange
¾ tsp. salt
1 cup granulated cane sugar
¾ cup chilled salted butter
2 tbsp. fresh orange juice
1 cup frozen cranberries
¾ to 1 cup chilled half and half, plus extra for glaze
¼ cup granulated sugar
Directions
-Preheat to 375F
-Combine flour, baking powder, orange zest, salt and sugar
-Grate cold butter into dry ingredients and mix well with hands, rubbing butter and flour together, in order to make a coarse meal
-Add frozen cranberries, lemon juice, and slowly add half and half
-Mix into a dough that will hold together but isn't wet or sticky
-Form into ball
-Place on parchment paper and use hands to form a rectangle approx. 1 inch thick
-Cut into triangles like you wold a pizza
-Brush with half and half and liberally sprinkle with sugar
-Place on parchment paper covered pan
-Bake for 20 minutes and check color- cook 5 more minutes and watch closely- you want to top browned slightly
Tip- Use a cheese grater with large holes to grate your cold butter. This makes the "cutting in" process SO easy! This also works great for pie crusts.
Tip- See below for how I pat out and cut dough
