This super easy and cheap recipe will be a hit with everyone! Full of cilantro and chili spice this will give your Mexican night a healthy twist! I serve with cilantro lime black beans and a veggie. This was a Sunday clear out the fridge meal so the only vegetable I had was zucchini. Zucchini isn't traditionally served with Mexican but I seasoned it like I would Mexican street corn (See recipe) and it actually worked pretty well! This is an example of getting creative with ingredients that you have on hand. Sometimes it doesn't work and sometimes you'll be pleasantly surprised!

Ingredients
Tilapia (Frozen or fresh)
3 TBSP Chili powder
1/2 tsp Cayenne pepper (more or less to taste)
Pink salt
Pepper
Garlic powder
Avocado oil
Topping
Avocado
Lime
Cilantro
Salt
Garlic powder
Directions
Fish
-Preheat broiler
-Mix seasonings and liberally cover thawed fish
-Cover baking pan with tin foil and add a little avocado oil
-Broil fish 5 minutes per side
Topping
-1 avocado
-1 cup cilantro
-Juice of 1 lime
-Salt/garlic powder to taste
-Blend well in food processor
Serve with a liberal amount of topping on fish with a squeeze of lime and cropped cilantro.
Make it a full meal with rice, quinoa or beans, veggie of your choice and as always, a small salad. (If you really love avocado see my avocado rice recipe.)
