Spaghetti squash is a great way to make Italian more healthy. Honestly, you will be able to tell you don't have noodles, but if it's cooked right, sometimes I would rather eat squash pasta than regular pasta. It has a nice flavor and the texture makes you feel like you're eating something other than pasta sauce in a bowl.

Ingredients
Spaghetti squash
Olive oil
Salt
Peper
Garlic powder
Directions
Preheat oven to 375F
Cut side stem end off
Very carefully cut in half- it can be hard to cut so please don't lose any fingers
Coat inside with olive oil and spices
Place upside down on baking pan
Cook for 35-40 mins
Use a fork to fluff up the inside of the squash, top with desired sauce and serve!
Tip- Get a toaster oven! I cook SO much in mine. I even bake bread in it. I usually cook for two people so it's is a great energy saver because we don't have to use our big oven as much!
This is spaghetti squash topped with my Chicken Pesto Sauce (see Chicken Pesto Pasta recipe)
