Pesto

There aren't many things that get me excited like pesto. I mean...Garlic, basil, pine nuts, and cheese. What's not to love? I lick the spoon and bowl like most people lick brownie batter. This is super easy to make, but I will say, it takes a TON of basil. Unless you have a macho, established plant you'll need to buy a box of fresh basil from the grocery. You can use this in many different recipes- try Chicken Pesto Pasta!

Ingredients

A box of fresh basil- enough to almost fill your food processor

3-4 large cloves of garlic

2 cups fresh parmesan cheese (or a blend- I use a parmesan, romano, asiago blend)

1/2 cup pine nuts (or walnuts)

1/4 cup olive oil and more while processing

Salt, garlic powder, pepper to taste

Directions

No need to cut anything...Just throw it all in the food processor and add oil as it's mixing to get the consistency you want. Taste and add more spices if needed.
