Garlic Smashed Potatoes

These potatoes are addictive. The garlic on top and the skins become a little crunchy and the center is soft and buttery. Normally, these are made using herbs such as thyme or rosemary, but I didn't have any fresh herbs when I was cooking dinner so I decided to simplify. This is an example of how having some simple ingredients in your pantry can allow you to easily cook something delicious on the fly!

Ingredients
Small yellow potatoes
Three cloves of minced garlic
Olive oil
Salt
Pepper
Garlic powder
Parsley (If desired)
Directions
-Preheat to 400F
-Boil potatoes until soft
-Drain potatoes and toss with olive oil and spices
-Carefully, (They will be hot) one by one, smash with a potato masher or strong fork
-Brush with olive oil and sprinkle with mincer garlic and spices
-Bake for approximately 20 mins
-Serve fresh out of the oven with chopped parsley if desired
