Chicken Sriracha Stirfry

I have to admit, I don't know if Sriracha is considered healthy, but this dish is full of veggies so it has the balance factor! Try to make this at the beginning of the week so you can not only have leftovers but also cook some extra chicken to have to make a couple lunches! This allows you to cook for more than one meal at a time.

Ingredients
Lb chicken tenders
3 cloves of garlic minced
1/2 TBSP minced ginger
1/2 green pepper
1/2 white onion
1 Zucchini
Broccoli (how ever much you want)
Bok Choy- 2-3 big handfuls. It will cook down like spinach so don't be afraid to add a lot.
1 or 2 cups of mushrooms
Low sodium Tamari (GF soy sauce)
Sriracha
1/ TBSP Garlic powder
Pinch of peper
1/2 tsp cayenne pepper
Olive oil
1 TBSP Coconut oil
Rice
Directions
-Place chicken in a bowl and sprinkle with garlic powder, cayenne pepper. Mix well to coat. Add more if desired.
- Chop remaining ingredients and set aside in separate piles
Tip- preparing your ingredients before you cook will allow you to add everything to the pan when you're ready without stopping to chop.
- Measure out rice and water and place on stove so it will be ready to start cooking
- Drizzle pan with olive oil and add coconut oil. Heat pan on high/medium high
-When pan is hot add chicken and cook approx. 3-5 mins per side on medium high heat
- Take chicken from hot pan and set aside
- To the same pan add a splash or two of Tamari to deglaze the pan
- Add Garlic, ginger, pepper and onion and stir for about 2 minutes
- Add zucchini, and broccoli, and another splash or two of Tamari and cover for approx. 10 mins
- Start cooking your rice so everything will be done at the same time
-While the veggies cook cut up chicken (I use kitchen scissors to cut in half and then cut cubes) add a splash of Tamari and 1/3 cup Sriracha to chicken and mix until coated
Tip- Check your broccoli. If it's still hard, cover and cook 5 more minutes. I don't like mine cooked too much so 10 minutes works for my taste but that doesn't mean it will for you.

- Add mushrooms and bok choy to pan and cover 5-10 mins
- Add chicken to the pan and stir- TATSE! If your tastebuds want more of something, add more.
Tip- Remember to taste before you serve and remember you can always add more of something but you can't take away.

Serve Over rice and drizzle with extra Sriracha!
This should serve four people easily. I cook it for two and have at least two meals worth of leftovers. This is one of those dishes that's almost better leftover because the flavors meld together even more over time!
