Banana Pancakes

I love these pancakes because not only do they taste great, they are also good for you and so easy to make! When I discovered this recipe on Pinterest I couldn't believe they were going to taste good, but they do.

Ingredients
One banana
2 eggs
1 tsp cinnamon
A pinch of baking powder
Add whatever you're feeling- nuts, berries, chocochips, etc
Coconut oil
Directions
Mash bananas
Add eggs and cinnamon
Mix everything together
Heat a pan with coconut oil, on medium heat, and add pancakes when hot
As one side is cooking sprinkle you extras on top
Flip after approx. 2 mins- when bottom is golden brown.

Tip- Coconut oil smokes if it gets too hot so you might need to remove the pan from the heat for a minute between cooking to let the pan cool a little. If your pan gets dry add a little more oil.
Even though these are made with bananas remember to eat a serving of fruit with your breakfast. These go great with an orange and some Trader Joes chicken sausage! Syrup is always a good choice but jam or honey is also very yummy!
