Sunny Side Avo Toast

I'm sure everyone has heard of avocado toast. If you haven't, hold on to your socks, because it's about to knock them off! This breakfast is packed with healthy fats and protein with a serving of fruit to start the day off right. (That's not wine for breakfast. It's Power Berry juice!)

Ingredients
1 slice of bread (I use GF bread)
Enough avocado to give you a nice even layer on your toast. Usually about half for one piece of toast
1 egg
Olive oil
Salt
Pepper
Garlic powder
Cayenne pepper
Directions
Drizzle a little olive oil on bread and pop it in toaster oven
While bread is toasting cook your egg
When egg gets toward the end of cooking pull out your toast
Spread Avo on toast and sprinkle with a little seasoning and olive oil
Place egg on top and season slightly


Tip
I hate when the egg get hard and leathery on the bottom, but its hard to get the yolk cooked without cooking the bottom too much. This is my routine for a perfect sunny side up egg- heat my pan with olive oil. When the pan is nice and hot crack egg gently into the pan and wait only a few seconds. In these few seconds break the membrane around the yolk with spatula. In the first picture you can see the jelly looking membrane surrounding the yolk- make sure you don't break the yolk when breaking membrane. Once that's done, place a lid over pan and turn to warm or take it off the heat. While it's covered steam cooks the yolk without scorching the bottom. When the yolk has a white film on top take it out of the pan. Less white= runnier middle. More white=less runny.
