Best GF Banana Bread

This banana bread can easily be made with regular flour BUT this is the best GF banana bread I've had/made. I use Trader Joes GF flour blend. It comes in a little bitty bag and is slightly expensive but it's so darn good. You can use whatever all purpose flour you like. Also, speaking of free will... You can make changes to this. If you hate nuts, take them out. If you love cinnamon add a ton. You get the idea.

The loaf is not super tall but it is so moist with a slightly crisp outer edge. The flavors are all so strong and delicious!
Tip- Gather everything you are going to need and place on the counter in categories- butter and sugar/wet mix/dry mix/bananas and walnuts.
Ingredients
1 egg
1/2 cup brown sugar
1/2 unbleached cane sugar
1/3 softened cup butter
1 TBSP Coconut oil
1/4 cup sour cream or greek yogurt
1 tsp vanilla
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt 1 TBSP cinnamon
2 overripe smashed bananas (you can save browning bananas in the freezer and use later!)
1/2 cup walnuts
Directions
-Preheat to 350F
-Prepare pan - I use a 9x9 pan prepared with coconut oil rubbed on the entire inside surface.
-Cream butter/ coconut oil and sugars

Tip- Make sure your butter is soft, but not liquid. Don't skip the creaming step. It makes a huge difference!
-Add sour cream, egg, and vanilla to sugar/butter and combine
-In separate bowl- mix flour, baking powder/soda, salt, and cinnamon
-Slowly add flour mix to wet mix with a baking spatula
-Add smashed bananas and walnuts and mix well
-Pour in prepared pan and smooth top with spatula

-Bake for 50-65 mins (watch it closely after 45 mins)
-Take out when toothpick come out clean (check a few spots because sometimes the toothpick will go in a part with banana and it comes out with what looks like batter but really is just gooey banana.)
Tip- you can tent your pan with tin foil if the top is getting dark but the middle is still not done.
